Social Distancing Salad

I recognize the news can be scary, which is why today I prepared some healthy social distancing salad. Not only is social distancing what's being asked by American citizens, this salad is good for our health and our soul. I know you want to stay up to speed on what's happening, so for Lunch grab a news paper and make some space for your health and this immunity boosting salad. My family loves experimenting and throwing different ingredients from our last Whole Foods dash into salads. I encourage you to feel inspired and experiment with the ingredients in your fridge.
Serves:
- 5 people
Time:
- 30 minutes (including the dressing)
Ingredients for salad:
- one bag of spring greens
- four radishes
- one avocado
- two cans of tuna
- four cucumbers
- one pound of tomatoes
Equipment:
- knife
- cutting board
- large and small bowl
- spatula
- strainer
Instructions:
- wash the spring greens and set them aside for later use
- cut up the cucumbers, tomatoes, avocado and radishes in bite sized pieces
- take tuna out of the cans
- drain the tuna
- throw the veggies, tuna and spring greens in a bowl
- toss together
Ingredients for salad dressing:
- half a cup of hummus
- quarter cup of olive oil
- two tablespoons of lemon juice
- salt and peper to taste
Instructions (salad dressing):
- mix all the ingredients in a small bowl
- pour evenly over salad
- toss salad and dressing together
This salad is perfect for Lunch or a side salad at dinner if you take out the tuna. Enjoy!
