Peach Perfect

All around me I'm surrounded by beautiful, loving, compassionate, and kind people who encourage me and make me feel so special. My Grandma is one of those people. When I’m with her, I feel like the luckiest person alive. She showers me with love as well as an abundance of random snacks and dried fruit. I feel powerful and heard because of the people around me who show me what it means to be appreciated and supported. At school, I have teachers I love. My seventh-grade history teacher, Ms. Pokorney, is my favorite person in the whole world. I’m seriously in love with her. I stalk her, it’s embarrassing. I have saught out and found adults who believe in me and want to see me succeed and follow my passions. My camp counselors have become my role models and no words can describe how life-changing it’s been to have older girls to connect with and look up to. I have extremely loving and loyal friends who always make me feel like the coolest person even in the most uncool situations, such as when I tripped on my own shoelaces in front of the principal. The upcoming election is generating a lot of nerves and tension, but I’m hopeful. When I look at the people around me, I’m blown away by the talent, light, and love overflowing in each smile. I have faith in each other and in this country. So, whether or not you eat a piece of peach pie, take a moment to cherish the people in your life who make every day a bit sweeter.
Filling:
- 5 cups of peaches (6-7 ripe peaches)
- 2 tablespoons lemon juice
- 1/2 cup of sugar
- 1/4 all purpose flour
- pinch of ground nutmeg
Directions:
- roll out two pieces of the phyllo dough
- combine the filling (no order, do as you please!)
- put the first piece of dough in the nine inch pie dish
- pour the filling in the dish
- put the remaining dough on top of the pie
- heat the oven to 425
- bake the pie for 15minutes
- lower the temperature to 375 and bake for 45 minutes
- Once out of the oven, let the pie cool for 10 minutes before serving
Materials:
- nine inch pie dish
- one phyllo dough
