It's finally summer - wahoo! My freshman year ended June 10th with a close of my computer. Everyone I've talked to agrees that it was quite anti-climactic. We're all a bit unsure what our Covid summer is going to look like, but I'm not at all unsure of what it will taste like. Do yourself and summer a favor by making some delicious, finger licking, feel good guacamole. If there's one food that screams summer and afternoons by the pool, it's guac.
Preparation time:
- 15 minutes
Serves:
- eight people
Ingredients:
- three ripe avocados
- one lime
- two cloves of garlic
- one medium to large Roma tomato
- half a cup of chopped cilantro
- half a red chili pepper
- salt and pepper to taste
Equipment:
- knife
- cutting board
- bowl
- fork
Instructions:
- cut up the tomatoes, cilantro, garlic and chili pepper on a cutting board
- put ingredients into a bowl
- squeeze the lime on the chopped ingredients in the bowl
- peel the avocados
- add the avocados to the bowl
- mash up the avocado and the igrdients with a fork
I like my guacamole a little chunky, so I don't mash up the avocados too much. Depending on your taste buds, you can choose!
Stay calm, bask in the sun and eat some guac!
Had our first Social Distancing Salad. Will now always include hummus in dressing! Thank you!!
