A great way to pass time: prepare and eat this delicious snack

Kudos to my Aunt who introduced me to this recipe from Anthony Bordain's cookbook. (She thinks his last one.) These delicious, crunchy, spicy nuts are addictive and a healthy snack. Instead of going to your cupboard to snack on chips that are 2 weeks expired, reach for these filling and protein packed nuts. They are absolutely delectable!
Makes:
- 8 cups
Serves:
- all your snacking needs
Prep time:
- 10ish minutes
Baking time:
- 30 minutes
Ingredients:
- 4 large egg whites
- 5 pounds mixed nuts
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2 teaspoons ground cinnamon
- 1 1/2 tablespoons ground cayenne pepper
- hot paprika to taste
- 1 1/4 tablespoons salt
Equipment:
- two bowls
- whisk (whatever will do the trick)
- 2 sheet pans lined with parchment paper
Instructions:
- preheat the oven to 325°F
- in a large mixing bowl, whisk the egg whites until they are foamy and nearly stiff
- in another mixing bowl, combine the nuts, sugars, cinnamon, cayenne, and salt and toss to coat
- fold in the egg whites gently (make sure all the nuts are coated in egg white)
- divide the mixture evenly between the two prepared sheet pans
- bake in the oven for 30 minutes (stir/rotate the nuts at the 15-minute mark)
* the nuts should be dry and crisp after 30 minutes
- remove the nuts from the oven and let cool for 5 minutes before serving
